Day 20

Wow…I’m 2/3 of the way done!  Today with dinner, we tried zucchini noodles for the first time.  We got Veggie Noodle Co. zucchini noodles at Whole Foods.  They were great with the creamy avocado pesto sauce (recipe below).  And the portobello mushroom buns are definitely becoming a favorite in our house!

Breakfast:

  • No’tmeal (see day 13 for recipe)
  • Fruit (raspberries, blueberries and banana)

Lunch:

  • Leftover lamb chops
  • Leftover sautéed zucchini
  • 1/2 baked potato
  • Fruit (watermelon and strawberries)

Snack:

  • 1/2 apple with cinnamon

Dinner:
