Day 23

So just one week left guys!  In some ways the time has gone by fast, but in other it seems to have gone painfully slowly, hah.  I am feeling good though 🙂  My skin feels clearer, my concentration seems better and I have lost a few pounds, so that doesn’t hurt either!  Overall I feel like I have more energy and I have been sleeping really well.  All positive changes so far 🙂

Breakfast:

  • 2 hard boiled eggs
  • 2 homemade pork sausages
  • 1 banana
  • 2-10 oz cups of coffee with coconut milk

Lunch:

  • Leftover chicken thighs
  • Leftover diced sweet potatoes
  • Salad with romaines lettuce, cherry tomatoes, celery, carrots and cucumbers with Tessemae’s Zesty Ranch

Snack:

  • 1/2 apple with cinnamon
  • Handful of almonds

Dinner:

  • Greek Grilled Eggplant Steaks (we used this recipe, but eliminated the cheese)
  • Fruit (pineapple)
  • Sautéed diced fingerling potatoes
  • Salad with romaines lettuce, cherry tomatoes, celery, carrots and cucumbers with olive oil and balsamic vinegar dressing
